Slow Cooker Potato & Onion Bake (4 Ingredients)

This recipe feels like a warm hug from the past. My great-aunt made it every Sunday during the Depression, when money was scarce but potatoes and onions were cheap and filling. With just a few pantry staples—potatoes, onions, flour, and butter—it transforms into something deeply cozy, with tender layers and buttery, “roasty” flavor, all from the slow cooker.

It’s the kind of set-it-and-forget comfort food that works on a busy weekday or a lazy Sunday, stretching simple ingredients into a satisfying side dish. Serve it straight from the slow cooker with roast chicken, pork chops, meatloaf, or sausages. Add a crisp salad or steamed green beans for balance, and something tangy—pickles, sauerkraut, or vinegar slaw—to cut through the richness. Leftovers reheat beautifully next to scrambled eggs or an omelet for a hearty breakfast-for-dinner.

Slow Cooker Potato & Onion Bake (4 Ingredients)

Ingredients

Ingredient Amount Notes
Unsalted butter 3 tbsp Plus extra for greasing
Russet or Yukon Gold potatoes 2½ lbs Peeled, sliced ⅛-inch thick
Yellow onions 2 large Thinly sliced
All-purpose flour 3 tbsp
Kosher salt 1 tsp Or to taste
Black pepper ½ tsp Optional

Directions

  1. Grease the inside of a 4–6 quart slow cooker with butter.
  2. Slice potatoes into thin rounds (⅛ inch). Slice onions into thin half-moons.
  3. Mix flour, salt, and pepper in a small bowl.
  4. Layer potatoes on the bottom of the slow cooker, overlapping slightly. Scatter onions over top. Sprinkle lightly with flour mixture, then dot with butter.
  5. Repeat layers until all ingredients are used, finishing with potatoes on top. Dot remaining butter over the surface.
  6. Cover and cook:
    • HIGH for 3½–4 hours, or
    • LOW for 6–7 hours, until potatoes are fork-tender and onions soft.
  7. Optional: Let sit on WARM or LOW for 15–20 minutes with lid ajar to evaporate excess moisture and encourage golden spots.
  8. Serve directly from the slow cooker, scooping through the layers for buttery potatoes and caramelized onions. Adjust salt at the table if needed.
