Bologna Cheese Bites

This little snack always takes me back to afternoons at my grandpa’s kitchen table. He’d come in from the barn, open the fridge, and within minutes have a tray of sizzling bologna cheese bites ready to share. Just three simple ingredients—nothing fancy—but when the bologna curls into little cups and the cheddar melts into a bubbly puddle, they vanish fast. Warm, salty, and satisfying, they’re low carb, budget-friendly, and perfect when you want something quick without fussing over a full meal.

Serve them hot, straight from the baking tray, while the edges are crisp and the cheese is gooey. They’re delicious on their own—pile them into a coffee mug with toothpicks—or pair them with crunchy raw veggies like celery sticks, bell pepper strips, or cucumber slices for a lighter spread. A dish of yellow or spicy brown mustard adds that classic Midwestern lunchbox flavor. For a crowd, set them alongside deviled eggs, dill pickles, or a simple green salad.

Bologna Cheese Bites
Ingredients
| Ingredient | Amount | Notes |
|---|---|---|
| Bologna slices | 8 (about 12 oz) | Regular or thick-cut |
| Cheddar cheese | 4 oz | Cut into 8 cubes |
| Cooking oil or butter | 1 tsp | For greasing foil |
Directions
- Preheat oven to 400°F (200°C). Line a baking sheet with foil and lightly grease with oil or butter.
- Lay bologna slices flat on the sheet, spaced apart.
- Place one cube of cheddar in the center of each slice, pressing gently so it sits securely.
- Bake for 8–12 minutes, watching closely. The bologna should curl into cups, edges crisp, and cheese melted and bubbly.
- Remove from oven and let rest 2–3 minutes. The cheese will thicken slightly as it cools.
- Use a spatula to loosen each bite from the foil. Serve warm, either straight from the tray or on a plate.
