For the Balsamic Marinade

  • ⅓ cup balsamic vinegar
  • 3 tbsp olive oil
  • 2 tbsp low‑sodium soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 3 cloves garlic, minced
  • ½ tsp black pepper

Method

  1. Prep the oven: Preheat to 425°F. Line a large rimmed sheet pan with foil and coat with nonstick spray.
  2. Make the marinade: Whisk balsamic vinegar, olive oil, soy sauce, Worcestershire, honey, Dijon, garlic, and black pepper until smooth.
  3. Marinate the steak: Place sliced sirloin in a zip‑top bag or shallow dish. Pour in half the marinade, toss to coat, and let sit for at least 15 minutes.
  4. Season the veggies: Spread broccoli, peppers, and onion on the sheet pan. Drizzle with remaining marinade plus 2 tbsp olive oil. Season with salt and pepper, toss, and arrange in an even layer.
  5. Roast vegetables: Bake for 12–15 minutes, until edges start to caramelize.
  6. Add the steak: Pat steak strips dry, then nestle them in the center of the pan, pushing veggies to the sides.
  7. Finish roasting: Return to oven for 8–10 minutes, until steak reaches 145°F (medium) and vegetables are tender.
  8. Rest & serve: Let rest 5 minutes. Garnish with parsley and serve over rice, mashed potatoes, or enjoy as is.
