Wide egg noodles 12 oz (340 g)
Olive oil 2 tbsp
Italian sausage, sliced or crumbled 1 lb (450 g)
Onion, thinly sliced 1 medium
Red bell pepper, sliced 1
Green bell pepper, sliced 1
Garlic, minced 4 cloves
Italian seasoning 1 tsp
Crushed red pepper flakes (optional) ½ tsp
Black pepper ½ tsp
Salt ¾ tsp
Marinara or tomato basil sauce 1 cup
Dry red wine (or chicken broth) ½ cup
Parmesan cheese, grated ½ cup
Fresh basil or parsley, chopped ¼ cup

  1. Cook the Noodles
    Bring a large pot of salted water to a boil. Cook noodles until just tender, drain, and set aside.
  2. Brown the Sausage
    Heat olive oil in a large skillet over medium-high. Add sausage and cook until browned. Transfer to a plate.
  3. Sauté Veggies
    In the same skillet, add onion and bell peppers. Cook 4–5 minutes until softened.
