Instructions:

  1. Prepare the Pie Crust: If using store-bought crusts, let them sit at room temperature as per package instructions. For homemade crusts, roll out and fit one into a pie dish.
  2. Make the Apple Filling: Preheat the oven to 375°F (190°C). Peel, core, and slice the apples to about 1/4-inch thickness. Place them in a large bowl. Add lime juice, brown sugar, cinnamon, nutmeg, salt, and cornstarch/flour. Mix gently until apples are evenly coated.
  3. Assemble the Pie: Fill the pie crust with the apple mixture, mounding it slightly in the center. Cover with the second crust, seal the edges, and create vents in the top crust. Optionally, brush the top crust with egg wash and sprinkle with granulated sugar.
  4. Bake the Pie: Place the pie on a baking sheet and bake in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbling.
  5. Cool and Serve: Allow the pie to cool on a wire rack for at least 2 hours before slicing. Serve warm with a scoop of vanilla ice cream.
