For the Balsamic Marinade

- ⅓ cup balsamic vinegar
- 3 tbsp olive oil
- 2 tbsp low‑sodium soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 3 cloves garlic, minced
- ½ tsp black pepper
Method
- Prep the oven: Preheat to 425°F. Line a large rimmed sheet pan with foil and coat with nonstick spray.
- Make the marinade: Whisk balsamic vinegar, olive oil, soy sauce, Worcestershire, honey, Dijon, garlic, and black pepper until smooth.
- Marinate the steak: Place sliced sirloin in a zip‑top bag or shallow dish. Pour in half the marinade, toss to coat, and let sit for at least 15 minutes.
- Season the veggies: Spread broccoli, peppers, and onion on the sheet pan. Drizzle with remaining marinade plus 2 tbsp olive oil. Season with salt and pepper, toss, and arrange in an even layer.
- Roast vegetables: Bake for 12–15 minutes, until edges start to caramelize.
- Add the steak: Pat steak strips dry, then nestle them in the center of the pan, pushing veggies to the sides.
- Finish roasting: Return to oven for 8–10 minutes, until steak reaches 145°F (medium) and vegetables are tender.
- Rest & serve: Let rest 5 minutes. Garnish with parsley and serve over rice, mashed potatoes, or enjoy as is.
