Instructions
- Sauté Aromatics
Set Instant Pot to Sauté. Add olive oil and onion; cook until translucent. - Brown Beef
Add ground beef. Break up as it cooks until mostly browned. - Season
Stir in salt, pepper, garlic powder, and thyme. Drain excess grease if needed. - Add Broth & Rice
Pour in chicken broth. Spread rinsed rice evenly over meat (do not stir). Ensure rice is submerged. - Layer Soup
Dollop cream of mushroom soup on top of rice; spread evenly. Do not stir. - Pressure Cook
Cancel Sauté. Secure lid, set steam release to Sealing. Pressure Cook on High for 8 minutes. - Quick Release
When done, turn steam release to Venting. Wait for pressure indicator to drop. - Finish & Serve
Stir in corn. Gradually mix in cheese, one cup at a time (add more if desired). Let sit uncovered for a few minutes to melt. Serve hot.
