Hamburger & Rice Casserole

Ingredients

Sweet onion 1 small Diced
Lean ground beef 1 lb
Kosher salt ½ tsp
Black pepper ½ tsp
Garlic powder 2 tsp
Dried thyme leaves ½ tsp Not ground
Chicken broth 2½ cups Low sodium
Long grain white rice 1½ cups Rinsed
Cream of mushroom soup 1 (10.5 oz) can
Corn 2 cups frozen or 1 can Drained
Mexican blend cheese 2–3 cups Shredded

Instructions

  1. Sauté Aromatics
    Set Instant Pot to Sauté. Add olive oil and onion; cook until translucent.
  2. Brown Beef
    Add ground beef. Break up as it cooks until mostly browned.
  3. Season
    Stir in salt, pepper, garlic powder, and thyme. Drain excess grease if needed.
  4. Add Broth & Rice
    Pour in chicken broth. Spread rinsed rice evenly over meat (do not stir). Ensure rice is submerged.
  5. Layer Soup
    Dollop cream of mushroom soup on top of rice; spread evenly. Do not stir.
  6. Pressure Cook
    Cancel Sauté. Secure lid, set steam release to Sealing. Pressure Cook on High for 8 minutes.
  7. Quick Release
    When done, turn steam release to Venting. Wait for pressure indicator to drop.
  8. Finish & Serve
    Stir in corn. Gradually mix in cheese, one cup at a time (add more if desired). Let sit uncovered for a few minutes to melt. Serve hot.
