Lemon Bisque

Ingredients

Liquid & Flavor Whole milk ¾ cup
Liquid & Flavor Lemon juice ½ cup Freshly squeezed (2–3 lemons)
Liquid & Flavor Lemon zest 1 tsp Finely grated
Seasoning Salt ¾ tsp Adjust to taste
Seasoning Black pepper ¼ tsp
Seasoning White pepper Pinch Optional
Garnish Fresh parsley 1 tbsp Chopped

Instructions

Sauté the Aromatics

  • In a medium pot over medium heat, melt butter with olive oil.
  • Add onion; cook 4–5 minutes until soft.
  • Stir in garlic; cook 30 seconds until fragrant.

Create the Base

  • Sprinkle in flour; whisk for 1 minute.
  • Slowly pour in broth while whisking to prevent lumps.
  • Simmer 5–7 minutes until slightly thickened.

Add Creaminess

  • Stir in heavy cream and milk.
  • Reduce heat to low; simmer gently for 5 minutes.

Add the Lemon

  • Remove from direct heat.
  • Stir in lemon juice and zest gradually.
  • Taste and adjust seasoning.
  • Tip: Add lemon at the end to keep flavor bright and prevent curdling.

Blend (Optional but Recommended)

  • Use an immersion blender for a silky texture.
  • Or carefully blend in batches.

Serve

  • Ladle into bowls.
  • Garnish with parsley and extra zest if desired.
