Ingredient Quantity
Mayonnaise 1 cup
Barbecue sauce 1/2 cup
Spicy brown mustard 1/4 cup
Worcestershire sauce 2 tablespoons
Lime juice 2 tablespoons

Instructions:

  1. Make the Dressing: In a medium bowl, whisk together the mayonnaise, barbecue sauce, spicy brown mustard, Worcestershire sauce, and lime juice until the dressing is smooth and well combined. Set the dressing aside.
  2. Prepare Salad Ingredients: Wash and cut the romaine lettuce hearts into strips. Rinse and drain the canned whole kernel corn and black beans. Halve the cherry tomatoes. Dice the sharp cheddar cheese. Dice the avocado and sprinkle it with lime juice to prevent browning. Dice the red bell pepper. Remove the seeds from the jalapeño and mince it finely. Dice the red onion. Finely chop the fresh cilantro.
  3. Assemble the Salad: Place the cut romaine lettuce strips in a large salad bowl. Top the lettuce with the rinsed and drained corn and black beans, halved cherry tomatoes, diced cheddar cheese, diced avocado (sprinkled with lime juice), diced red bell pepper, minced jalapeño, diced red onion, and finely chopped fresh cilantro.
  4. Dress the Salad: Pour the prepared dressing over the salad ingredients in the large bowl.
  5. Toss to Combine: Gently toss all the salad ingredients together until they are evenly coated with the dressing.
  6. Rest and Serve: Let the Cowboy Salad rest for 15 to 20 minutes before serving. This allows the flavors to meld together and develop. Enjoy this hearty and flavorful salad!
