Instructions:
- Preheat and Prepare: Preheat your oven to 375°F and lightly grease a 9×13 inch baking dish.
- Brown the Sausage: In a large skillet, brown the sausage over medium-high heat, crumbling it as you go. Once cooked, evenly distribute the sausage in the baking dish.
- Make the Roux: In the same skillet, retain 2 tablespoons of sausage grease. Sprinkle flour over the grease and whisk to make a roux. Cook for about a minute.
- Create the Gravy: Gradually pour in the milk, whisking constantly to prevent lumps. Simmer until it thickens, then season with black pepper and salt. Pour the gravy over the sausage.
- Prepare the Biscuits: Separate the biscuit dough into individual biscuits, cut each into quarters, and scatter them on top of the gravy.
- Bake: Slide the dish into the oven and bake for approximately 25 minutes or until the biscuits turn golden brown. Add optional cheese 5 minutes before completion.
