Parmesan Cheese 2 cups (grated, divided)
Mascarpone Cheese 1 cup
Spaghetti 1 pound
Rotisserie Chicken 2 cups (shredded)
Mozzarella Cheese 1 cup (shredded, divided)
Italian Breadcrumbs 1/2 cup

Instructions:

  1. Preheat the Oven: Begin by preheating your oven to 350°F. Grease a 9-by-13-inch casserole dish to prevent sticking.
  2. Prepare the Sauce: In a saucepan, melt 5 tablespoons of butter over medium-low heat. Add flour and whisk until thickened. Gradually add chicken stock, whisking well after each addition. Once all the stock is added, bring the sauce to a simmer and remove from heat. Stir in garlic powder, black pepper, red pepper flakes, 1 ½ cups of Parmesan cheese, and mascarpone. Return the sauce to heat and add half-and-half. Set aside.
