Ingredients:

Egg Whites 5
Granulated Sugar 1 2/3 cups
Vanilla Extract 1 teaspoon
Cream of Tartar 1/2 teaspoon

Instructions:

  1. Prepare Ingredients: Gather 5 egg whites, 1 2/3 cups of granulated sugar, 1 teaspoon of vanilla extract, and 1/2 teaspoon of cream of tartar.
  2. Clean Equipment: Ensure that your mixer bowl and whisks are clean and free from any grease. Use lemon juice or vinegar to wipe them down if needed.
  3. Combine Ingredients: In the clean mixer bowl, combine the egg whites, granulated sugar, and cream of tartar.
  4. Heat Mixture: Place the mixer bowl over simmering water (creating a double boiler) and stir the mixture until it becomes hot, smooth, and reaches a temperature of 160°F. This usually takes 2-3 minutes.
  5. Whip Mixture: Transfer the bowl to a stand mixer and whip the mixture on medium-high speed until stiff peaks form. This should take around 6 minutes.
  6. Add Vanilla: Gradually add the vanilla extract while continuing to whip the mixture. Adjust the flavor to taste.
  7. Serve or Store: Use the frosting immediately to frost cakes or cupcakes, or store it in an airtight container at room temperature for up to two days or in the refrigerator for up to one week. Re-whip before using if storing.
