Creamy peanut butter, divided 3/4 cup

Salt 1/4 teaspoon
Quick-cooking oatmeal 1/2 cup
Butterscotch chips 1 cup

Instructions:

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.  
  2. Cream Sugars and Butter: In a large bowl, use an electric mixer to cream together the butter, granulated sugar, brown sugar, and 1/2 cup of the peanut butter until smooth.  
  3. Add Egg and Vanilla: Add the egg and vanilla extract to the mixture and mix until well combined.
  4. Combine Dry Ingredients: In a separate bowl, sift together the flour, baking soda, and salt. Stir in the quick-cooking oatmeal.
  5. Combine Wet and Dry: Gradually add the flour/oatmeal mixture to the butter mixture, mixing on low speed until just combined.
  6. Spread and Top: Spread the batter evenly into the prepared baking dish. Sprinkle the butterscotch chips evenly over the top.
  7. Bake: Bake for 20-25 minutes, or until the edges are golden brown.
  8. Prepare Icing: While the bars are baking, whisk together the powdered sugar, milk, and the remaining 1/4 cup of peanut butter until smooth.
