Magic Chicken Pie Recipe

Ingredients:

Cooked or shredded chicken 2 cups
Cubed butter 6 tablespoons
Chopped onion 1/2
Bisquick baking mix 2 cups
Chicken broth 1/1/2 cups
Milk 1/1/2 cups
Grated cheddar cheese 1 cup
Cream of chicken soup 10/1/2 ounces
Mixed vegetables, fresh or frozen 2 cups

How To Make

Step 1: Preheat and Melt Butter: Preheat your oven to 350F (175C). Place the 6 tablespoons of cubed butter in a 9×13-inch baking dish. Place the dish in the preheated oven for a few minutes until the butter is completely melted; then, carefully remove the dish.

Step 2: Prepare Batters: In one bowl, whisk together the 1 1/2 cups milk and 2 cups Bisquick baking mix. Set aside (this will be the topping layer). In a separate bowl, whisk together the 1 1/2 cups chicken broth and 10 1/2 ounces of cream of chicken soup until smooth. Set aside.

Step 3: Layer the Casserole Base: Layer the following ingredients directly into the baking dish, pouring them over the melted butter without stirring:

  • Spread the 2 cups cooked or shredded chicken evenly.

  • Spread the 2 cups mixed vegetables and 1/2 chopped onion over the chicken.

  • Sprinkle the 1 cup grated cheddar cheese over the vegetable layer.

Step 4: Pour Liquid Layers: Carefully pour the Bisquick batter evenly over the cheese and filling layers. Then, pour the soup-stock mixture evenly over the top of the Bisquick batter. Do not stir.

Step 5: Bake and Serve: Bake for 45 minutes or until the topping is golden brown and the filling is bubbly. Let the pie rest for 5-10 minutes before serving.
