Chicken & Dumplings!! One of my favorites!!

Rotisserie Chicken 1
Pillsbury Buttermilk Biscuits (any except flaky) 2 small cans
Cream of Chicken Soup 1 can
Chicken Stock (32oz box) 1
Milk 1 1/2 cups
Poultry Seasoning 1/2 tsp
Black Pepper 1/2 tsp
Butter 1/2 stick

Flour 1/4 cup
Milk 3/4 cup

How to Make Chicken & Dumplings:

Now that you have your ingredients ready, let’s proceed with the cooking process:

  1. Remove all the chicken from the bones and dice it. Set the diced chicken aside.
  2. Cut the buttermilk biscuits into 1/2″ pieces. Roll each biscuit between your hands to form a long tube, then cut it into half-inch pieces. Set the cut-up biscuits on a cookie sheet, keeping them separated. Place the sheet in the refrigerator.
  3. In a large pot, combine the chicken stock, cream of chicken soup, and milk. Whisk them together until the soup is fully dissolved. Add the poultry seasoning and black pepper. Bring the mixture to a full boil, and then add the real butter. Reduce the heat to medium to maintain a simmer without boiling.
  4. Once the butter has melted, start dropping the prepared biscuit pieces into the boiling liquid. Stir occasionally while reducing the heat to medium or low.
  5. As all the biscuit pieces have been added to the liquid, let them boil lightly while you prepare the thickener. To create the thickener, combine 1/4 cup of flour and 3/4 cup of milk, stirring them thoroughly.
  6. Slowly add the thickener to the liquid and biscuit mixture, stirring constantly. This will slightly thicken the liquid.
  7. Once the liquid begins to thicken, add the diced chicken. Cover the mixture and let it cook for approximately 20 minutes, stirring occasionally. You’ll know it’s ready when the biscuits are no longer doughy but firm.
