Step 1: Make the Syrup

  • In a medium saucepan, combine the sugar and water.
  • Bring to a boil over medium heat, stirring occasionally.
  • Cook for about 5 minutes until the syrup reaches the “thread stage” (a thin thread forms when lifted with a spoon).

Step 2: Mix in Coconut & Condensed Milk

  • Add the flaked coconut and stir to coat evenly.
  • Pour in the condensed milk and continue stirring.
  • Cook until the mixture thickens and pulls away from the bottom of the pan. You should be able to draw a clear line across the bottom with a spoon.

Step 3: Spread & Set

  • Remove from heat and immediately transfer to a greased glass dish.
  • Use a spatula to spread the mixture into an even layer.
  • Let it rest for 10 minutes to partially set.

Step 4: Slice & Cool

  • After resting, cut into squares, rectangles, or fun shapes.
  • Allow to cool completely before serving to achieve that perfect chewy texture.
