- Preheat Oven & Prep Onions: Preheat your oven to 375°F (190°C). Carefully place the 4 peeled and sliced onions into a parchment-lined baking dish, keeping the rings intact and together. Drizzle the 3 tablespoons of olive oil over the onions and season with salt and pepper to taste.
- Make the Cream Sauce: While the onions are roasting, place the 1 cup of heavy cream and ¼ cup of white wine into a saucepan on the stove. Heat the mixture until the cream begins to simmer around the edges. Once it simmers, remove the saucepan from the heat and set it aside.
- Roast the Onions: Place the baking dish with the onions in the preheated oven and roast for about 20 minutes, or until they are soft and beginning to turn golden.
- Combine & Finish Baking: Remove the onions from the oven. Slowly and carefully pour the cream mixture over the onions and sprinkle with the ¼ cup of grated Parmesan cheese. Cover the baking dish tightly with foil and return to the oven. Bake for another 20 minutes. Remove the foil and roast for an additional 5 minutes to allow the onions to brown and caramelize further.
- Serve: Remove from the oven and serve immediately.
