This is a hearty, overnight-friendly breakfast casserole featuring a base of hash browns, diced ham, and cheese baked in a creamy, savory custard.

Ingredients:

Frozen shredded hash brown potatoes 6 cups
Monterey Jack cheese, grated 2 cups
Ham, diced 2 cups
Green onions, chopped 1/2 cup
Large eggs, beaten 8
Evaporated milk 2 cans (12 oz)
Garlic salt 1/2 teaspoon
Freshly ground black pepper 1/4 teaspoon

How To Make Farmers Casserole:

Step 1: Preheat Oven: When ready to bake, preheat oven to 350F (175C).

Step 2: Layer Ingredients: Arrange 6 cups frozen shredded hash brown potatoes in the bottom of an 9×13-inch baking dish. Sprinkle with 2 cups grated Monterey Jack cheese, 2 cups diced ham, and 1/2 cup chopped green onion.

Step 3: Prepare Custard: In a large mixing bowl, combine the 8 large eggs, 2 cans evaporated milk, 1/2 teaspoon garlic salt, and 1/4 teaspoon black pepper. Pour the mixture evenly over the ingredients in the baking dish.

Step 4: Bake: Cover and refrigerate up to overnight, if desired.

  • If baking unchilled (right away), bake uncovered until the center is set, about 1 hour 15 minutes.

  • If chilled (overnight), bake uncovered until the center is set, about 1 hour 30 minutes.
