This is a hearty, overnight-friendly breakfast casserole featuring a base of hash browns, diced ham, and cheese baked in a creamy, savory custard.

Ingredients:

| Frozen shredded hash brown potatoes | 6 cups |
| Monterey Jack cheese, grated | 2 cups |
| Ham, diced | 2 cups |
| Green onions, chopped | 1/2 cup |
| Large eggs, beaten | 8 |
| Evaporated milk | 2 cans (12 oz) |
| Garlic salt | 1/2 teaspoon |
| Freshly ground black pepper | 1/4 teaspoon |
How To Make Farmers Casserole:
Step 1: Preheat Oven: When ready to bake, preheat oven to 350F (175C).

Step 2: Layer Ingredients: Arrange 6 cups frozen shredded hash brown potatoes in the bottom of an 9×13-inch baking dish. Sprinkle with 2 cups grated Monterey Jack cheese, 2 cups diced ham, and 1/2 cup chopped green onion.

Step 3: Prepare Custard: In a large mixing bowl, combine the 8 large eggs, 2 cans evaporated milk, 1/2 teaspoon garlic salt, and 1/4 teaspoon black pepper. Pour the mixture evenly over the ingredients in the baking dish.
Step 4: Bake: Cover and refrigerate up to overnight, if desired.
