Pastrami Cheese Bites

These little bites are the kind of snack that sneaks onto the table and suddenly everyone’s reaching for them. My neighbor first brought a platter to one of our football nights years ago, and they’ve been a permanent request ever since. Peppery pastrami hugs a creamy cheese center, warmed just enough to soften and meld so they practically melt in your mouth. With only three ingredients and a few minutes of prep, they’re a lifesaver for busy parents, last‑minute hosts, or anyone who needs a quick finger food that disappears fast.

Serve them warm or at room temperature on a big platter with toothpicks handy—perfect for grabbing between plays or during a movie. Crisp veggies like celery, cucumber, and bell pepper balance the richness, while grainy mustard or dill pickles add a tangy kick. For a fuller spread, pair with a green salad or a tray of olives and nuts to keep things low carb but still festive.

Low Carb 3‑Ingredient Pastrami Cheese Bites
Ingredients
| Ingredient | Amount | Notes |
|---|---|---|
| Cream cheese | 8 oz (225 g) | Softened to room temperature |
| Swiss cheese (or other mild melty cheese) | ½ cup (2 oz / 55 g) | Shredded |
| Deli pastrami | ½ lb (225 g) | Thinly sliced, peppered if available (20–24 slices) |
Directions
- Line a plate or baking sheet with parchment paper for the finished rolls.
- In a medium bowl, mash together cream cheese and shredded Swiss until smooth and spreadable.
- Lay pastrami slices on a cutting board. If large, cut in half for bite‑sized pieces.
- Spoon 1–2 teaspoons of cheese mixture onto each slice.
- Fold sides of pastrami over the filling to form snug rolls. Place seam‑side down on the prepared sheet.
- Repeat until all ingredients are used.
- For the classic “melt in your mouth” texture, preheat oven to 300°F (150°C). Warm bites for 5–7 minutes until pastrami looks glossy and cheese softens (but doesn’t ooze).
- Let stand 5 minutes to firm slightly, then transfer to a serving plate.
- Serve warm or at room temperature. If making ahead, refrigerate and bring to room temp before serving.
