Cowboy Meatloaf and Potato Casserole

Ingredients:

Ingredient Quantity
Ground Beef 1 pound
Onion 1, chopped
Garlic Cloves 2, chopped
Breadcrumbs 1 cup
Ketchup 1/4 cup
Worcestershire Sauce 2 tablespoons
Dried Thyme 1 teaspoon
Salt & Pepper To taste
Potatoes 4 large, thinly sliced
Cheddar Cheese 1 cup, grated
Chopped Fresh Parsley (optional) For garnish

Instructions:

  1. Preheat and Prep: Heat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.

  2. Mix the Meatloaf: In a large bowl, combine ground beef, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix well until everything is evenly incorporated.

  3. Layer the Casserole: Spread half of the sliced potatoes on the bottom of the greased baking dish. Shape the meatloaf mixture into a loaf and place it on top of the potatoes. Arrange the remaining sliced potatoes over the meatloaf, covering it completely.

  4. Bake and Cheese Up: Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil, sprinkle the grated cheddar cheese on top, and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.

  5. Serve and Enjoy: Let the casserole cool slightly before slicing and serving. Garnish with chopped fresh parsley, if desired.
