For the Chicken:

Cornstarch 1 tbsp

For the Chow Mein:

Vegetable oil 2 tbsp
Onion, thinly sliced 1 small
Shredded cabbage 1 cup
Julienned carrots 1/2 cup
Thinly sliced bell peppers 1/2 cup
Bean sprouts (optional) 1/2 cup
Minced garlic 2 cloves
Sliced green onions (for garnish) 2
Sesame seeds (for garnish) Optional

For the Sauce:

Soy sauce (low sodium, if preferred) 1/4 cup
Oyster sauce 1 tbsp
Hoisin sauce 1 tbsp
Sugar 1 tbsp
Sesame oil 1 tsp
Ground black pepper 1/2 tsp
Chicken broth or water 1/4 cup

Instructions:

  1. Marinate Chicken: In a small bowl, combine soy sauce, cornstarch, and sesame oil. Add chicken and let marinate for 15 minutes.
  2. Cook Noodles: Cook chow mein noodles according to package instructions. Drain and set aside.
  3. Prepare Sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, black pepper, and chicken broth.
  4. Stir-Fry Chicken: Heat oil in a large skillet or wok. Add marinated chicken and stir-fry for 3-4 minutes until cooked through. Remove and set aside.
  5. Stir-Fry Vegetables: In the same skillet, add more oil. Add onion, cabbage, carrots, bell peppers, and garlic. Stir-fry for 3-4 minutes until tender-crisp.
  6. Combine Noodles and Sauce: Add cooked noodles to skillet with vegetables. Pour sauce over and toss until well coated and heated through.
  7. Return Chicken: Return cooked chicken to pan and toss until evenly distributed.
  8. Serve: Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot.
