These Baked Garlic Parmesan Chicken Lasagna Roll-Ups offer a fun and flavorful twist on traditional lasagna. Tender lasagna noodles are filled with a creamy mixture of shredded chicken, ricotta, and Parmesan cheese, then baked in marinara sauce and topped with melted mozzarella. They are a perfect individual serving and a delightful comfort food.

Ingredients:

Lasagna noodles 8
Cooked chicken, shredded 2 cups
Ricotta cheese 1 cup
Grated Parmesan cheese 1 cup, divided
Shredded mozzarella cheese 1 cup
Garlic, minced 2 cloves
Egg 1
Dried Italian seasoning 1 teaspoon
Salt To taste
Pepper To taste
Marinara sauce 2 cups
Fresh parsley, chopped For garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a baking sheet to prevent sticking.
  3. In a large bowl, combine the shredded chicken, ricotta cheese, 1/2 cup of the Parmesan cheese, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until well combined.
  4. Spread a thin layer of the chicken mixture over each lasagna noodle, then roll them up tightly.
  5. Spread 1 cup of marinara sauce on the bottom of a 9×13 inch baking dish.
  6. Place the roll-ups seam side down in the baking dish. Pour the remaining marinara sauce over the roll-ups.
  7. Sprinkle the mozzarella cheese and the remaining Parmesan cheese over the top.
  8. Cover the dish with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  10. Garnish with chopped parsley before serving.
