Ingredients:

Shrimp, peeled and deveined 1 lb
Kosher salt and freshly cracked black pepper To taste
Cajun seasoning 1 teaspoon
Dried oregano 1/2 teaspoon
Olive oil 2 tablespoons
Andouille sausage or smoked sausage, thinly sliced 6 ounces
Fettuccine pasta 10 ounces
Yellow onion, thinly sliced 1/2
Red bell pepper, thinly sliced 1
Cajun seasoning 4 teaspoons
Brown sugar 1 teaspoon
Garlic, chopped 2-3 cloves
Crushed tomatoes 1/2 cup
Chicken broth 1 cup
Heavy cream 1 cup
Grated Parmesan cheese 2/3 cup
Parsley, chopped 1 tablespoon

Instructions:

  1. Prepare Shrimp: Season shrimp with Cajun seasoning, dried oregano, salt, and pepper. Cook in a large skillet over medium-high heat with olive oil until pink and opaque. Remove from skillet and set aside.
  2. Cook Sausage: In the same skillet, add olive oil and cook sausage until browned. Remove from skillet and set aside with shrimp.
  3. Cook Pasta: Cook fettuccine pasta according to package instructions until al dente. Drain and set aside.
  4. Cook Vegetables: Sauté onion and red bell pepper in the same skillet until tender. Add garlic, Cajun seasoning, and brown sugar. Cook for an additional 1-2 minutes.
  5. Make Sauce: Stir in crushed tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes. Reduce heat to low and stir in heavy cream and Parmesan cheese. Cook until sauce is well combined and heated through.
  6. Combine and Serve: Add cooked shrimp, sausage, and pasta to the skillet. Toss everything together until well coated with the sauce. Sprinkle with chopped parsley and serve hot.
