My boyfriend requested I make this and I had never even heard of it!

These Butter Swim Biscuits are named for the way they’re baked in a pool of melted butter, resulting in incredibly tender, flaky layers. They’re easy to make and perfect for breakfast, alongside soups and stews, or as an afternoon snack.

Ingredients:

Ingredient Quantity
All-purpose flour 2 cups
Baking powder 1 tablespoon
Salt 1 teaspoon
Unsalted butter, cold and cubed ½ cup
Milk ¾ cup
Optional: Additional butter for serving

Instructions:

  1. Preheat the Oven:

    • Turn your oven on and preheat it to 425°F (220°C).
  2. Prepare the Dry Ingredients:

    • In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. Cut in the Cold Butter:

    • Add the cold, cubed butter to the dry ingredients.
    • Using a pastry cutter or your fingertips, gently work the butter into the flour mixture until it resembles coarse crumbs. The key here is to keep the butter cold. Small, pea-sized pieces of butter are what create those flaky layers!
  4. Add the Milk:

    • Gradually pour the milk into the flour and butter mixture.
    • Use a wooden spoon or spatula to gently fold the ingredients together until just combined. Avoid overmixing, or your biscuits will be tough.
  5. Shape and Cut the Biscuits:

    • Lightly flour a clean work surface and transfer the dough onto it.
    • Gently pat the dough into a rectangle about ½ inch thick.
    • Use a biscuit cutter or a floured glass to cut out biscuits from the dough. Gather any scraps, press them together, and cut out more biscuits until all the dough is used.
  6. Bake the Biscuits:

    • Line a baking sheet with parchment paper and arrange the biscuits on it, placing them close together but not touching.
    • Bake the biscuits in the preheated oven for 12-15 minutes, or until they’re golden brown on top.
  7. Serve Warm:

    • (Optional) Brush the tops of the warm biscuits with melted butter for extra flavor and shine.
    • Serve your delicious Butter Swim Biscuits warm with additional butter, honey, or your favorite jam. Enjoy!
