These Butter Swim Biscuits are named for the way they’re baked in a pool of melted butter, resulting in incredibly tender, flaky layers. They’re easy to make and perfect for breakfast, alongside soups and stews, or as an afternoon snack.

Ingredients:

Instructions:

Preheat the Oven:
- Turn your oven on and preheat it to 425°F (220°C).

Prepare the Dry Ingredients:
- In a large mixing bowl, whisk together the flour, baking powder, and salt.

Cut in the Cold Butter:
- Add the cold, cubed butter to the dry ingredients.
- Using a pastry cutter or your fingertips, gently work the butter into the flour mixture until it resembles coarse crumbs. The key here is to keep the butter cold. Small, pea-sized pieces of butter are what create those flaky layers!

Add the Milk:
- Gradually pour the milk into the flour and butter mixture.
- Use a wooden spoon or spatula to gently fold the ingredients together until just combined. Avoid overmixing, or your biscuits will be tough.

Shape and Cut the Biscuits:
- Lightly flour a clean work surface and transfer the dough onto it.
- Gently pat the dough into a rectangle about ½ inch thick.
- Use a biscuit cutter or a floured glass to cut out biscuits from the dough. Gather any scraps, press them together, and cut out more biscuits until all the dough is used.

- Line a baking sheet with parchment paper and arrange the biscuits on it, placing them close together but not touching.
