My boyfriend grew up in Kentucky so when came across this recipe looking for a bday treat I knew I had to try this recipe

These Buttery Pecan Snowball Cookies are tender, melt-in-your-mouth shortbread cookies packed with finely chopped pecans. They are traditionally rolled in powdered sugar twice to achieve their signature “snowball” appearance and sweet finish.

Buttery Pecan Snowball Cookies

Ingredients:

Ingredient Quantity
Butter, softened 2 sticks
Powdered sugar 1 1/2 cups
Vanilla extract 2 teaspoons
Salt Pinch
All-purpose flour 2 1/4 cups
Finely chopped pecans 1 cup

How To Make Buttery Pecan Snowball Cookies:

  1. Step 1: Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Step 2: Make the Dough: In a large mixing bowl, combine the softened butter, cup powdered sugar, vanilla extract, salt, and all-purpose flour. Beat with a mixer until a smooth, cohesive dough forms.
  3. Step 3: Fold in Pecans: Gently fold in the 1 cup of finely chopped pecans until they are evenly distributed throughout the dough.
  4. Step 4: Shape and Bake: Wet your hands slightly and roll the dough into 36 evenly sized balls (about 1 inch each). Place the dough balls on a parchment-lined baking sheet and bake for 12 minutes, or until the bottoms are lightly golden.
  5. Step 5: Cool and Sugar Coat: Let the cookies cool completely on the baking sheet. Place the remaining 1 cup of powdered sugar in a shallow bowl. Roll the cooled cookies in the powdered sugar to fully coat.
  6. Step 6: Serve: Serve and enjoy! (For an extra “snowy” coating, you can roll them a second time after the first coating has set for a few minutes.)
