How To Make Mom’s Butter Baked Chicken:
- Step 1: Preheat and Prepare Chicken: Preheat oven to 350°F (175°C). Pour a small amount of the evaporated milk into a shallow dish, just enough for dipping the chicken. In a separate dish, combine the 1 cup flour, 1 1/2 teaspoons salt, and 1/8 teaspoon pepper.
- Step 2: Dredge Chicken: Dip each piece of chicken breast in the evaporated milk, then dredge it thoroughly in the seasoned flour mixture.
- Step 3: First Bake: Melt the 1/4 cup butter directly in a 13×9 inch baking dish. Place the floured chicken pieces in the melted butter. Bake the chicken for 30 minutes at 350°F (175°C).
- Step 4: Prepare Sauce: While the chicken bakes, mix the 1/4 cup water, 1 can Cream of Chicken soup, and the remaining evaporated milk from the can together until smooth.
