Buttery Pecan Snowball Cookies

Ingredients:

Ingredient Quantity
Butter, softened 1 cup
Powdered sugar 1/2 cup
Salt 1/4 teaspoon
Vanilla extract 1 1/2 teaspoons
Flour 2 1/4 cups
Finely chopped pecans 1 cup
Powdered sugar, for dusting 1 cup

Instructions:

  1. Preheat Oven: Preheat oven to 350°F (175°C).
  2. Cream Ingredients: In a stand mixer, cream together butter and powdered sugar on low speed. Add salt, vanilla, flour, and pecans. Mix until combined.
  3. Roll and Bake: Roll dough into 1-inch balls and place on parchment-lined baking sheets, spacing them a few inches apart. Bake for 11 minutes, or until lightly golden.
  4. Coat in Powdered Sugar: Remove cookies from oven and let cool slightly. Place powdered sugar in a large bag or bowl. Roll 3-4 cookies at a time in the sugar, shaking off excess. Transfer to cooling racks and let cool completely. Roll each cookie in powdered sugar again.
