Chocolate Covered Strawberry Brownies

Baking powder 1 tbsp
Salt 1/4 tsp
Granulated sugar 3/4 cup
Large eggs 2
Vanilla extract 1 tsp
Unsalted butter, cut into pieces 1/2 cup
Bittersweet chocolate, chopped 8 oz

Strawberries, washed and hulled 1 lb
Bittersweet chocolate, chopped 8 oz

Instructions:

  1. Prepare the Brownies:

    • Preheat oven to 350°F (175°C).
    • Line an 8×8 inch baking pan with parchment paper.
    • In a microwave-safe bowl, melt butter and 8 oz of chocolate in 30-second increments, stirring until smooth.
    • In a separate bowl, whisk together flour, baking powder, and salt.
    • Beat eggs, sugar, and vanilla until light and fluffy.
    • Gradually add melted chocolate mixture to egg mixture, then fold in dry ingredients.
    • Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let cool completely.
  2. Prepare the Strawberries:

    • While brownies are cooling, wash and hull strawberries.
  3. Prepare the Chocolate Coating:

    • Melt remaining 8 oz of chocolate in a microwave-safe bowl.
  4. Assemble:

    • Arrange strawberries on top of cooled brownies.
    • Pour melted chocolate over strawberries and spread evenly.
    • Refrigerate for 30 minutes, or until chocolate sets.
  5. Serve:

    • Cut into squares and enjoy!
