Low-Carb Pizza Bites

Ingredients

Mozzarella cheese 2 cups Shredded, low-moisture part-skim
Pepperoni slices 24 About 2–3 inches each
Pizza or marinara sauce ½ cup Thick, low-sugar

Directions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Portion mozzarella into 24 mounds (about 1 heaping tbsp each), spaced 1½ inches apart. Flatten into loose circles about 2 inches wide.
  3. Spoon 1 tsp marinara into the center of each circle, leaving a border of cheese around the edge.
  4. Top each with one pepperoni slice (or two if small), pressing lightly to adhere.
  5. Bake 8–12 minutes, until cheese is bubbling and edges are deep golden brown. Pepperoni should curl and glisten.
  6. Cool 3–5 minutes on the sheet to let cheese set.
  7. Use a thin spatula to transfer bites to a plate. Serve warm with extra marinara for dipping if desired.
