This indulgent dessert is a symphony of flavors, combining the zesty brightness of lemons with layers of creamy goodness, all nestled atop a crunchy crust.

Ingredients:

Crust:

Ingredient Quantity
All-purpose flour 1 cup
Granulated sugar 2 tablespoons
Nuts 1/4 cup, chopped finely
Unsalted butter 1/2 cup (1 stick), softened

Cream Cheese Layer:

Ingredient Quantity
Cream cheese 1 package (8 oz), softened
Granulated sugar 1 cup
Lemon zest Zest of 1 lemon
Lemon juice Juice of 1 lemon
Whipped topping 1 (8 oz) container, thawed

Pudding Layer:

Ingredient Quantity
Instant lemon pudding mix 2 boxes (3.4 oz each)
Milk 3 cups, cold

Top Layer:

Ingredient Quantity
Whipped topping 1 (8 oz) container, thawed
Optional garnish Chopped nuts, lemon zest, lemon slices

Instructions:

  • Crust Preparation:
  1. Preheat the oven to 350 degrees F.
  2. Spray a 13×9 inch baking dish with cooking spray.
  3. In a large bowl, combine flour, sugar, chopped nuts, and softened butter. Mix until well combined.
  4. Press the mixture into the bottom of the prepared baking dish.
  5. Bake for 15-18 minutes or until golden brown. Allow it to cool completely.
  • Cream Cheese Layer
  1. In a mixing bowl, cream together the softened cream cheese and granulated sugar until smooth.
  2. Stir in the lemon zest, lemon juice, and whipped topping until well combined.
  3. Spread the mixture over the cooled crust.
  4. Chill in the refrigerator for at least 30 minutes.
  • Pudding Layer
  1. In a large bowl, whisk together the instant lemon pudding mix and cold milk until smooth and creamy.
  2. Spread the pudding over the cream cheese layer.
  3. Chill in the refrigerator for at least 15 minutes, or until the pudding is set.
  • Final Layer
  1. Spread the remaining whipped topping over the set pudding layer.
  2. If desired, garnish with additional chopped nuts, lemon zest, or lemon slices.
  3. Chill in the refrigerator for at least 1 hour before serving.
  • Serving and Storage

Serve the Lemon Lush chilled, cut into squares.
