Italian Pinwheels

Ingredients:

Ingredient Quantity
Cream cheese, softened 8 oz
Dried Italian seasoning 1 teaspoon
Onion powder ¼ teaspoon
Garlic powder ¼ teaspoon
Roasted red peppers, drained and diced ½ cup
Pepperoncini or banana peppers, drained and diced ½ cup
Thin slices provolone cheese 16
Sliced salami or soppressata ½ lb
Large flour tortillas 6-8
Kosher salt and freshly ground black pepper To taste

Step-by-step Instructions:

  1. Make the Cream Cheese Spread: In a medium bowl, stir together the 8 oz softened cream cheese, 1 teaspoon dried Italian seasoning, ¼ teaspoon onion powder, ¼ teaspoon garlic powder, and salt and pepper to taste until the mixture is smooth and evenly combined. Stir in the ½ cup diced roasted red peppers and ½ cup diced pepperoncini until they are evenly distributed.
  2. Assemble the Pinwheels: Lay out one large flour tortilla on a flat surface. Spread about a half cup of the cream cheese mixture over the entire surface, all the way to the edges. At one end of the tortilla, lay out a few slices of provolone cheese, then top the provolone with a layer of salami or soppressata slices.
  3. Roll, Wrap & Chill: Starting from the end with the provolone and salami, roll the tortilla up very tightly. Once rolled, wrap the tortilla tightly in plastic wrap to help it hold its shape. Repeat with the remaining tortillas and filling. Place all the wrapped rolls in the refrigerator to chill for at least 1 hour, or until you are ready to serve them. Chilling allows the flavors to meld and makes the rolls easier to slice.
  4. Slice & Serve: Just before serving, unwrap the chilled rolls. Using a sharp knife, slice each roll into 1-inch thick pinwheels. Arrange them on a serving platter and enjoy!
