This hearty and comforting casserole is a perfect weeknight meal. The creamy cheese sauce, savory ground beef, and tender potatoes make it a crowd-pleaser.

Ingredients:

Ingredient Quantity
Ground beef 1 pound
Yellow onion, diced 1
Potatoes, peeled and sliced 3-4 pounds
Shredded Cheddar cheese 8 ounces or more
Cheddar cheese soup mix 1 can
Evaporated milk or whole milk 12 ounces
Milk ½ cup
Salt 1 teaspoon
Pepper ½ teaspoon

Instructions:

  1. Preheat oven: Set your oven to 350°F (175°C).
  2. Prepare baking dish: Grease a 9×13 inch baking dish.
  3. Cook ground beef: Brown the ground beef and onion in a large skillet until the meat is cooked through. Drain off any excess grease.
  4. Layer ingredients:
    • Layer the bottom of the baking dish with a layer of potatoes.
    • Season with salt and pepper.
    • Top with a layer of ground beef mixture.
    • Sprinkle with a layer of cheese.
    • Repeat these layers two more times, ending with a layer of cheese.
  5. Make cheese sauce: In a bowl, combine the Cheddar cheese soup mix, evaporated milk, and milk. Mix well.
  6. Pour cheese sauce: Pour the cheese sauce over the top of the casserole.
  7. Bake: Cover the casserole with aluminum foil and bake for 1 hour.
  8. Broil: Remove the foil and broil for an additional 15 minutes, or until the cheese is golden brown.
  9. Serve: Let the casserole cool slightly before serving.

Tip: If using thicker potato slices, you may need to increase the baking time.
