In my younger days, I was obsessed with this meal and constantly requested my mom to make it.

This impressive loaf features layers of soft, buttery dough packed with fresh apples and cinnamon sugar. The “pull-apart” style creates plenty of nooks and crannies for the sweet glaze to settle into.

Ingredients:

For the Dough
All-purpose flour 3 cups
Granulated sugar 1/4 cup
Active dry yeast 2 1/4 teaspoons
Salt 1/2 teaspoon
Unsalted butter, melted 1/4 cup
Whole milk 1/3 cup
Water 1/4 cup
Large eggs 2
Vanilla extract 1 teaspoon
For the Filling
Apples, peeled and finely chopped 2 medium
Granulated sugar 1/2 cup
Ground cinnamon 2 teaspoons
Unsalted butter, melted 1/4 cup
For the Glaze
Powdered sugar 1 cup
Milk 2/3 tablespoons
Vanilla extract 1/2 teaspoon

How To Make Apple Cinnamon Pull-Apart Bread:

Step 1: Start the Dough: In a large mixing bowl, whisk together 2 cups of the flour, the 1/4 cup of sugar, yeast, and salt.

Step 2: Heat the Liquids: In a small saucepan, combine the 1/4 cup of butter, 1/3 cup of milk, and 1/4 cup of water. Heat over low until warm (about 110°F). Add this warm liquid to the dry ingredients, followed by the 2 eggs and 1 tsp of vanilla.

Step 3: Knead: Gradually add the remaining 1 cup of flour until a soft dough forms. Turn the dough out onto a floured surface and knead for about 5 minutes until it is smooth and elastic.

Step 4: First Rise: Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm spot until doubled in size—this usually takes about 1 hour.

Step 5: Prep and Roll: Preheat your oven to 350°F (175°C) and grease a glass baking dish. Punch down the risen dough and roll it out on a floured surface into a large rectangle.

Step 6: Layer the Filling: Brush the rectangle with the 1/4 cup of melted butter. Mix the 1/2 cup of sugar and 2 tsp of cinnamon together and sprinkle it over the butter. Top with the 2 chopped apples.

Step 7: Stack and Cut: Cut the dough into vertical strips. Stack the strips on top of each other, then cut the stack into smaller square sections. Arrange these sections vertically (on their edges) in the prepared baking dish.

Step 8: Second Rise and Bake: Cover the dish and let the dough rise for another 30 minutes. Bake for 30–35 minutes until the top is golden brown and the center is set.

Step 9: Glaze and Serve: Whisk the 1 cup of powdered sugar, 2/3 tbsp of milk, and 1/2 tsp of vanilla until smooth. Drizzle the glaze over the bread while it is still warm and serve immediately.
