- Preheat the oven: Preheat your oven to 375°F (190°C). Carefully place the sliced onions into a parchment-lined baking dish, keeping the rings intact and together as much as possible.
- Dress the onions: Drizzle the onions with the extra virgin olive oil and season generously with salt and pepper to taste.
- Begin roasting: Place the baking dish with the onions in the preheated oven.
- Prepare the cream sauce: While the onions are roasting, place the heavy cream and white wine into a saucepan on the stove over medium heat. Heat until the cream begins to simmer around the edges. Once it simmers, remove the saucepan from the heat and set it aside.
- Transfer onions to a new dish: Carefully remove the onions from the oven. Transfer them to another baking dish, again trying to keep the rings intact and together.
- Add cream sauce and Parmesan: Slowly pour the warm cream mixture evenly over the roasted onions. Sprinkle the grated Parmesan cheese generously over the top.
- Bake covered: Cover the baking dish tightly with aluminum foil and return it to the oven. Bake for another 20 minutes.
- Roast uncovered: Carefully remove the foil from the baking dish and continue to roast for an additional 5 minutes, or until the onions have begun to brown and caramelize and the sauce is bubbly.
