- Cook the Bacon: In a large skillet, cook the 1 pound of diced bacon over medium heat until it’s crispy. Using a slotted spoon, remove the bacon and set it aside, but leave the drippings in the skillet.
- Sauté Onion and Garlic: Add the 1 chopped large onion to the skillet and sauté until it becomes translucent, about 5 minutes. Stir in the 2 minced garlic cloves and cook for another minute until fragrant.
- Combine Ingredients: In a large baking dish or Dutch oven, combine the cooked bacon, sautéed onion and garlic, and all the beans (2 cans of pork and beans, 1 can of kidney beans, and 1 can of black beans).
- Make the Sauce: In a separate bowl, whisk together the ½ cup barbecue sauce, ¼ cup ketchup, ¼ cup brown sugar, 1 tablespoon Worcestershire sauce, 1 tablespoon yellow mustard, 1 teaspoon smoked paprika, salt, and pepper. Pour this mixture over the beans and stir to combine everything.
- Bake: Preheat your oven to 350°F (175°C). Cover the baking dish with foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the sauce is bubbly and thickened.
- Serve: Let the beans cool slightly before serving.
