Ingredients:

Ingredients Amount
Active dried yeast 2.5 tablespoons
Lukewarm water 1 and 1/4 cups (about 105˚F)
Sugar 1/4 cup
Basic yogurt 3/4 cup
Olive oil 2 tablespoons
Salt 1/2 tablespoon
Dried basil 3/4 tablespoon
Dried oregano 30 milliliters
Garlic powder 1.5 milligrams
All-purpose flour 3.75 cups
Fresh parsley 1/4 cup, chopped
Olive oil (for frying) 1/2 cup

Instructions:

  1. Prepare the Dough:
    • In a large bowl, combine the yeast, sugar, and lukewarm water. Allow it to stand for 8 to 10 minutes until frothy.
    • In another bowl, whisk together the yogurt, olive oil, salt, dried basil, dried oregano, and garlic powder until well combined.
    • Gradually add the flour and chopped parsley to the yeast mixture, stirring with a wooden spoon until a dough forms.
  2. Knead the Dough:
    • Transfer the dough to a generously floured surface or kitchen counter. Knead the dough for about 4 minutes until smooth and elastic, adding more flour if needed to prevent sticking.
  3. Shape the Dough:
    • Divide the dough into 10 equal portions and shape each portion into a ball. Ensure they are evenly sized for uniform cooking.
    • Lightly dust the dough balls with flour and cover them with a kitchen towel. Let them rest for 15 minutes.
  4. Cook the Flatbreads:
    • Heat a skillet over medium-low heat. Roll out each dough ball into a circle approximately 7 inches in diameter.
    • Brush one side of the rolled-out dough with olive oil and place it oil-side down in the heated skillet.
    • Cook for about 1 ½ minutes until bubbles form on the surface. Brush the top with olive oil before flipping.
    • Cook for another minute or until the underside is golden brown. Repeat the process with the remaining dough balls.
  5. Serve and Enjoy:
    • Once cooked, transfer the flatbreads to a dish and cover them with a kitchen towel to keep them warm.
    • Serve the flatbreads warm with your favorite toppings or alongside your favorite dishes. They can also be toasted or chilled before serving for added versatility.
