Directions
- Prep slow cooker: Lightly coat the insert with nonstick spray or oil for easier cleanup.
- Mix: Add frozen potatoes, soup, 1½ cups cheddar, and bacon to the slow cooker. Stir until evenly coated.
- Cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, stirring once halfway if convenient, until potatoes are tender and mixture is hot and bubbly.
- Finish: Sprinkle remaining ½ cup cheddar over the top. Cover and cook 10–15 minutes more until melted.
