Unsalted butter, melted 1/2 cup
Granulated sugar 1/4 cup

Cheesecake Filling:

Granulated sugar 3/4 cup
Large eggs 2
Vanilla extract 1 teaspoon
Sour cream 1/4 cup

Caramel Topping:

Sea salt (optional) 1/2 teaspoon

Instructions:

  1. Prepare the Crust:

    • Preheat oven to 325°F (163°C). Line a 9×9 inch baking pan with parchment paper.
    • Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into the prepared pan.
    • Bake for 10 minutes. Let cool.
  2. Make the Cheesecake Filling:

    • Beat cream cheese until smooth. Gradually add sugar, then eggs one at a time. Stir in vanilla and sour cream.
  3. Assemble and Bake:

    • Pour filling over cooled crust. Drizzle half the caramel sauce over the filling and swirl.
    • Bake for 35-40 minutes or until set. Let cool completely.
  4. Chill and Serve:

    • Refrigerate for at least 4 hours. Drizzle with remaining caramel and sprinkle with salt (optional). Cut into bars and serve chilled.
