Method

  1. Prepare Sauce Base
    In a serving bowl, mix sesame paste, soy sauce, black vinegar, chili oil, sugar, and Sichuan peppercorn powder. Slowly stir in warm noodle water until smooth and slightly runny.
  2. Cook Pork Topping
    Heat oil in a pan over medium heat. Add garlic and pork, stir‑fry until browned. Add soy sauce, Shaoxing wine, sugar, and chili bean paste. Cook 3–5 minutes until fragrant and slightly sticky. Set aside.
  3. Boil Noodles
    Cook noodles in boiling water:

    • Fresh: 2–3 minutes
    • Dried: 5–8 minutes
      Reserve ½ cup noodle water, then drain. Toss noodles lightly with oil to prevent sticking.
  4. Assemble Bowls
    In each bowl:

    • Pour sauce at the bottom
    • Add hot noodles
    • Spoon pork topping over noodles
