Cowboy Trifle Recipe

Ingredients:

Cornbread mix (prepared per package instructions) 1 box
Jalapeños (medium, seeded and minced) 2
Onion (medium, yellow) ½
Bell pepper (chopped) 1
Bacon (thick sliced, cooked and chopped) 1 pound
Mayonnaise 1 ½ cups
Ranch dressing 1 cup
Diced tomatoes (canned, drained) 1 (28 oz)
Beans (pinto, kidney, or black, drained and rinsed) 2 (16 oz) cans
Sweet corn (canned, drained and rinsed) 2 (16 oz) cans
Cheddar cheese (shredded) 2 cups
Green onions (thinly sliced) 1 small bunch
Salt To taste
Pepper To taste

Instructions:

  1. Prepare cornbread: Cut prepared cornbread into 1-inch chunks.
  2. Make salsa: In a bowl, combine diced tomatoes, chopped onion, bell pepper, drained beans, minced jalapeños, and drained corn.
  3. Make dressing: Combine mayonnaise and ranch dressing in a separate bowl. Season with salt and pepper to taste.
  4. Assemble trifle:
    • In a serving bowl, layer chopped cornbread, then a layer of salsa.
    • Add a layer of shredded cheese, followed by a layer of the mayonnaise mixture.
    • Top with a layer of diced bacon.
    • Repeat layers until the bowl is full.
  5. Garnish: Garnish the top with sliced green onions, any remaining cheese, and bacon bits.
  6. Refrigerate: Refrigerate the trifle for at least 30 minutes before serving to allow the flavors to meld.
