Chicken Noodle Soup

Ingredients:

Boneless, skinless chicken breasts or thighs 1 pound
Chicken broth 8 cups
Water 2 cups
Medium carrots, sliced 2
Celery stalks, sliced 2
Medium onion, diced 1
Garlic cloves, minced 3
Bay leaf 1
Dried thyme 1 tsp
Dried parsley 1 tsp
Salt and pepper To taste
Egg noodles 2 cups
Oil, for cooking 1 tablespoon

How To Make Chicken Noodle Soup:

  1. Step 1: Prep & Brown Chicken: Cut the chicken into small pieces. Heat the oil in a large saucepan or Dutch oven over medium heat. Add the chicken and cook for about 5 minutes or until browned on all sides. Remove the chicken from the pan and set it aside.
  2. Step 2: Sauté Vegetables: Add the chopped onion, minced garlic, sliced carrots, and sliced celery to the same pan. Continue cooking for about 5 minutes or until the vegetables begin to soften.
  3. Step 3: Simmer the Broth: Pour in the chicken broth and water. Add the bay leaf, dried thyme, and dried parsley, and season with salt and pepper. Bring the soup to a boil, then immediately reduce the heat and simmer for 20 minutes to allow the flavors to develop.
  4. Step 4: Cook Noodles Separately: While the soup is simmering, independently prepare the egg noodles by following the instructions on the box. Once cooked, rinse and set aside.
  5. Step 5: Combine & Finish: After the soup has simmered for 20 minutes, return the cooked chicken to the pot. Simmer for another 10 minutes or until the chicken is completely cooked through and tender. Remove the bay leaf from the soup and discard it. Add the cooked egg noodles to the pot and stir to combine.
  6. Step 6: Serve: Taste the soup and adjust the seasoning with salt and pepper as needed. Serve hot immediately.
