Ingredients:

Ingredient Quantity
Sausage (bulk or links) 1 pound
Uncooked White Rice 1 cup
Chicken Broth 2 cups
Shredded Cheddar Cheese 1 cup
Onion (diced) 1 medium
Bell Pepper (diced) 1
Garlic (minced) 2 cloves
Diced Tomatoes (drained) 1 can (14.5 oz)
Paprika 1 teaspoon
Salt and Pepper To taste

Instructions:

  1. Brown the Sausage:

    • In a large skillet, cook and crumble the sausage over medium heat until it’s browned.
    • Remove the cooked sausage from the pan using a slotted spoon, leaving a tablespoon or two of grease/oil in the skillet for further cooking.
  2. Sautéing the Veggies:

    • Add the diced onion and bell pepper to the skillet with the remaining sausage drippings. Sauté the vegetables for 5-7 minutes, or until they become tender and softened.
  3. Aromatic Garlic:

    • Add the minced garlic to the pan and sauté for an additional minute, releasing the fragrant garlic aroma.
  4. Flavorful Rice:

    • Stir in the uncooked white rice and let it cook for a minute or two, allowing the rice to absorb some of the delicious pan drippings and flavors.
  5. Simmering the Base:

    • Pour in the chicken broth and the drained diced tomatoes. Stir well to combine all the ingredients in the skillet.
  6. Sausage Returns:

    • Add the cooked and crumbled sausage back to the skillet with the rice mixture.
  7. Spicing it Up:

    • Sprinkle the paprika over the ingredients in the skillet. Season with salt and pepper to your taste.
  8. Reaching Perfection:

    • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and simmer for 18-20 minutes. The rice is fully cooked and the liquid is absorbed when it’s done.
  9. Cheesy Goodness:

    • Remove the skillet from the heat. Sprinkle the shredded cheddar cheese evenly over the top of the rice mixture. Cover the skillet again for a few minutes. The trapped heat will melt the cheese beautifully.
  10. Fluff and Serve:

  • Use a fork to fluff up the cooked rice. Serve the Cheesy Sausage and Rice hot and enjoy!
