Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare Chicken: If you haven’t already, cook and shred the chicken. Use leftover rotisserie chicken or quickly cook chicken breasts in a skillet with some oil until fully cooked. Shred the chicken using two forks and set aside.
  3. Prepare Ingredients: Dice the tomato and shred the lettuce. Drain the Rotel tomatoes and set aside.
  4. Assemble Casserole: In a large mixing bowl, combine the shredded chicken, diced tomato, Rotel tomatoes, cream of chicken soup, taco seasoning, half of the Mexican cheese blend, and sour cream. Mix until well combined.
