Large tomatoes 4-6
Ground beef 1 pound
Taco seasoning 2 tbsp
Spinach, chopped 4 cups
Corn (fresh or frozen) 1/2 cup
Sharp cheddar cheese (optional) 1/4 cup
Cilantro, chopped 1 tbsp

Instructions:

  1. Preheat Oven:
    • Preheat the oven to 375°F.
  2. Prepare Tomatoes:
    • Slice the top off each tomato and scoop out all the pulp.
    • Place the hollowed tomatoes in a baking dish.
  3. Cook Ground Beef:
    • Brown the ground beef in a large saute pan until fully cooked.
    • Add the taco seasoning to the cooked beef, mixing well.
  4. Add Spinach and Corn:
    • Stir in the chopped spinach and corn into the beef mixture.
    • Cook until the spinach is wilted, and everything is well mixed.
  5. Stuff Tomatoes:
    • Stuff each tomato with the beef and vegetable mixture.
    • If there’s any leftover beef, spread it in the bottom of the baking dish.
  6. Cheese Topping:
    • Sprinkle with cheddar cheese on top of the stuffed tomatoes (optional).
