I make it constantly through fall and winter (and sometimes in summer too, because my family never says no). It’s budget‑friendly, feeds a crowd, and tastes like it simmered all day at grandma’s house—because it really does.

Serve it with cornbread or crusty sourdough for dipping, and you’ve got a complete meal. Add a green salad if you like, but honestly, bread and soup are all you need.

Method
- Soak beans – The night before, cover beans with water and let soak 8+ hours. Drain and rinse.
- Layer ingredients – Add beans to a 6‑quart slow cooker. Top with ham, carrots, celery, onion, and garlic.
- Season & add liquid – Sprinkle thyme, paprika, and pepper. Tuck in bay leaves. Pour broth and water over everything, ensuring beans are submerged.
- Cook – Cover and cook on LOW 8–9 hours or HIGH 5–6 hours, until beans are tender and creamy.
- Thicken naturally – About 30 minutes before serving, discard bay leaves. Mash 1–1½ cups beans with a fork, then stir back in to thicken.
- Finish & serve – Taste and adjust seasoning with salt and pepper. Stir in parsley if using. Ladle hot soup into bowls and serve with bread or cornbread.
✨ Cozy, budget‑friendly, and soul‑warming—this is the kind of soup that makes weeknights feel like Sunday supper.
