Directions
- Grease the inside of a 4–6 quart slow cooker with butter.
- Slice potatoes into thin rounds (⅛ inch). Slice onions into thin half-moons.
- Mix flour, salt, and pepper in a small bowl.
- Layer potatoes on the bottom of the slow cooker, overlapping slightly. Scatter onions over top. Sprinkle lightly with flour mixture, then dot with butter.
- Repeat layers until all ingredients are used, finishing with potatoes on top. Dot remaining butter over the surface.
- Cover and cook:
- HIGH for 3½–4 hours, or
- LOW for 6–7 hours, until potatoes are fork-tender and onions soft.
- Optional: Let sit on WARM or LOW for 15–20 minutes with lid ajar to evaporate excess moisture and encourage golden spots.
- Serve directly from the slow cooker, scooping through the layers for buttery potatoes and caramelized onions. Adjust salt at the table if needed.
