Beef Enchilada Casserole

Ingredients

Meat Filling Amount
Ground beef 1 lb (450g)
Onion, finely chopped 1 small
Garlic, minced 2 cloves
Taco seasoning 1 packet or 2 tbsp
Water ½ cup
Black beans, drained & rinsed 1 cup
Corn kernels (fresh, canned, or frozen) 1 cup
Sauce & Layers Amount
Enchilada sauce (red or green) 2 cups
Tortillas (corn or flour), cut in halves/strips 8–10 small
Shredded cheese (cheddar, Monterey Jack, or mix) 2 cups
Optional Toppings
Sour cream As desired
Chopped cilantro As desired
Sliced olives As desired
Diced avocado As desired

Instructions

1. Preheat Oven

  • Set oven to 375°F (190°C).
  • Lightly grease a 9×13‑inch baking dish.

2. Cook the Beef

  • In a skillet over medium heat, brown the ground beef.
  • Add onion; cook until softened (3–4 minutes).
  • Stir in garlic; cook 30 seconds.

3. Season the Filling

  • Add taco seasoning and water; stir well.
  • Simmer 3–5 minutes until slightly thickened.
  • Mix in black beans and corn. Remove from heat.

4. Assemble the Casserole

  • Spread a thin layer of enchilada sauce on the bottom.
  • Add a layer of tortillas.
  • Spoon over beef mixture.
  • Sprinkle with cheese.
  • Repeat layers, finishing with sauce and cheese on top.

5. Bake

  • Cover with foil; bake 20 minutes.
  • Remove foil; bake another 10–15 minutes until cheese is melted and bubbly.

6. Rest & Serve

  • Let rest 5–10 minutes before slicing.
  • Add toppings and serve warm.
