Ingredients:

Tostitos Scoops tortilla chips 1 (10 oz) bag
Sweet corn (drained) 1 (15 oz) can
Cream cheese (softened) 1 (8 oz) block
Shredded mozzarella cheese 8 oz
Green chiles (mild or medium) 1 (4 oz) can
Large egg 1
Grated parmesan cheese 1/2 cup
Garlic powder 1 teaspoon
Salt 1 teaspoon
Black pepper 1/2 teaspoon

How to Make Iowa Party Bites:

Step 1: Prep the Trays: Preheat your oven to 425°F. Line two large baking sheets with parchment paper. Arrange the “Scoops” side-by-side, cup-side up.

Tip: Check your bag for broken chips first! You want the whole “bowls” to hold the maximum amount of cheesy corn goodness. Save the broken bits for a taco salad later.

Step 2: The Creamy Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Mix in the mozzarella, egg, drained corn, green chiles, garlic powder, salt, and pepper.

Tip: Make sure your corn is very well drained. If there is excess water in the can, it can make the bottom of the tortilla chips soggy during the bake.

Step 3: Fill and Top: Scoop about 1 tablespoon of the mixture into each chip. Don’t overfill them too much, or they might tip over in the oven! Finish each one with a generous sprinkle of grated parmesan cheese for that salty, golden crust.

Step 4: Bake to Bubbly: Bake for 13/15 minutes. You are looking for the parmesan on top to be golden-brown and the corn filling to be bubbling and “set.

Step 5: Serve: Let them cool for just 2/3 minutes on the pan so the cheese firms up slightly, then serve them warm.
