These Baked Potato Balls are a delicious and easy way to transform leftover mashed potatoes into a delightful appetizer or side dish. Crispy on the outside, fluffy and cheesy on the inside, and studded with savory bacon and fresh chives, these golden bites are sure to be a crowd-pleaser.

- Preheat Oven & Prep Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine Ingredients: In a large bowl, mix together the 2 cups mashed potatoes, 1/2 cup grated cheddar cheese, 1/4 cup chopped chives, 1/4 cup cooked and crumbled bacon, 1 beaten egg, salt, and pepper until all ingredients are well combined.
- Form & Coat: Form the potato mixture into small balls, about the size of a golf ball. Roll each ball generously in the 1/2 cup breadcrumbs to coat evenly on all sides.
- Arrange & Spray: Place the coated potato balls on the prepared baking sheet, leaving a little space between each one. Lightly spray each potato ball with olive oil spray to help them crisp up and turn golden.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the potato balls are golden brown and crispy on the outside.
- Cool & Serve: Allow them to cool slightly on the baking sheet for a few minutes before serving.
